Blueberry Cake in a Cup Baked in Microwave

Preparation time: 3 minutes; Cooking time: 2-2:30 minutes; Servings: 1

Nutrition: Calories:268 calories; 20g of protein; 7g of fiber

Ingredients:

·        1 egg

·        1 scoop of Garden of Life Meal Replacement (I used the

            Vanilla flavor)

·        2 tbs spoons of Coconut Yogurt (replacement for

             nondairy yogurt)

·        1 scoop or a handful of blueberries

·        1 tsp of baking powder

For the topping

·        1 scoop of Garden of Life Whey Protein (flavor of your

         preference – I used the peanut butter and chocolate)

·         Water to get the desired consistency (preferably creamy).

 

Preparation:

  1. In a bowl that can go to the microwave, mix the ingredients and microwave for 2:30 minutes.

  2. Remove the cake from the bowl after baking and set aside.

  3. Mix 1 scoop of Garden of Life Whey Protein with water (1 to 2 spoons, until a creamy consistency) and spread over the cake. And enjoy this delicious and nutritious food that can be served as a breakfast meal or light dinner or whenever you feel it is the time!
