Protein Pistachio Ice Cream

Nutrition per serving:  213 calories; 9g of protein; 8.7g of carbohydrates; 3 g of fat.

Ingredients:

  • 1 cup of pistachios (roasted and lightly salted; reserve some for topping)

  • ½ cup of Orgain Unsweetened Almond Milk

  • 2 teaspoons of vanilla extract.

  • 1 scoop of Garden of Life Collagen or ½ cup of Nestle Table Cream

  • 2 tablespoons monk fruit or the sweetener of your preference

 

Instructions:

  1. Place the pistachios in a food processor and process them for about 5 minutes, or until they form a smooth, creamy paste

  2. Combine the remaining ingredients.

  3. Pour the mixture into a container and freeze for at least 6 hours.

  4. Before serving, let it sit at room temperature for 5-10 minutes to soften.

  5. Serve and top with reserved pistachios. Enjoy!
