Pumpkin Coconut Protein Cookies

Total servings: 12 cookies

Nutrition per serving: 102 calories; 3.6g of protein; 4.3g of carbohydrates; 8.7g of fat.

 

Ingredients:

  • 1 1/2 cup almond flour

  • 2 tablespoons of erythritol or monk fruit

  • 1/2 teaspoon vanilla extract

  • 1 cup unsweetened coconut flakes

  • 1/2 cup of Libby's pumpkin puree

  • 1 scoop of Vital Proteins Collagen


Instructions:

  1. Pre heat the oven to 325 F degrees.

  2. In a medium size bowl, Add the dry ingredients and mix well. Combine the rest of the ingredients and mix well.

  3. Bring the ingredients together by squeezing the dough with your hands.

  4. Using a tablespoon, scoop the dough and roll it into balls.

  5. Place each ball onto a lined-parchment tray.

  6. Use a fork to flatten each cookie. The thinner, the crispier they will be.

  7. Bake for 10-12 minutes or until golden brown.

  8. Let the cookies cool for 5 minutes then transfer them to a recipient of your choice.

  9. Store in fridge in a sealed container for up to 5 days.
